We are thankful to God for the joy of expecting a new addition to our family! We hope to be holding our sweet rainbow baby π by the end of the summer! π
I can't believe we actually did it! We bought a new house. Its crazy that 5 years ago I was convinced our current home was our forever home. Well, three kids later and it just wasn't the perfect fit it was before. This new home has a wonderful layout, and is brand new, so (hopefully) no maintenance issues and we can dive into personalizing it as our own. I'm so thankful to God for the opportunity to upgrade our house that will hopefully enable us to continue to grow our family, homeschool our children, be hospitable to friends and family, and make memories for years to come. Now to pack, move, unpack and enjoy all the craziness of this season!
Talia and Tibby helped cook a family favorite tonight, one pot Cheesy Tortellini! π₯ They LOVE helping in the kitchen and I love having the space to spread out and nurture their abilities. This is a super simple meal to add to your weekly dinner plan! ~~~~~~~~~~~~~~~~~~~~~~ Hereβs the Recipe! -One pound Italian sausage (ground or cut up is fine) -16oz frozen cheese tortellini -2 to 3 cups of fresh cut spinach -1 can diced Italian style tomatoes -6 to 8oz cream cheese -(not pictured) 2 cups of chicken stock β’-β’-β’-β’ Brown sausage in pan, add spinach until tender, add in chicken stock, tomatoes and tortellini. Cover and let cook 6-8 minutes until pasta is tender. Add in cream cheese and mix, cooking until fully incorporated. Serve with some fresh parmesan on top! π
